Why, you may reflect on Shrove Tuesday (17 February), is the first pancake out of the pan so often a flabby, ragged mess? My theory is that the pan may not yet be hot enough.
After making your batter, put a knob of butter or a tbsp of oil into a frying pan over a medium heat, and leave it for five minutes. The oil or butter will have burned, so throw it away (if it’s butter, not down the sink), wipe the pan with a paper towel, and return it to the heat with a little more of your frying agent. Give the batter another quick whisk (some of the flour may have sunk), and proceed.

The trick is for the first to be absolutely overooked and as you say to have browned your butter first. Although the real answer is in the frying pan itself. Too many of us skimp on quality skillets etc. Invest in a really good pan

I bought your book for my husband several years ago but I'm the one who has made most use of it. Maybe another book would be a better project than blogging?
I'm not sure I have a strong enough idea for a second book - and then of course there's the question of whether anyone would sign it up. Am working on something completely different this year. But never say never. Nick
